The Pavilion in Monaco
Yannick Alléno entrusted his Pavillon Monte-Carlo, table on the waves of the sublime Hôtel Hermitage, to the eyes of Chahan Minassian. The Armenian-born interior designer made this stopover at Rocha on his own. “Chahanism” operates there with the naturalness of beautiful materials. A huge metallic wood counter, foreground of an open kitchen with geometric tiles, immediately creates a convivial spirit. We let ourselves be enveloped by the gestures of the brigade and the kaleidoscope of the sea reflected in small smoked mirrors. Shimmering whitewashed, grey-green tones, each element is designed as a subtle reminder of the Mediterranean, over which an XXL terrace extends its hanging garden. We enjoy green lasagna, pasta au gratin with basil, lemon, bottarga, whiting in fish & chips, steak sheet by sheet with capers…

Bella in Cannes
Perched on the penthouse of the Belle Plage hotel, Bella is the Riviera’s new festive and tasty crow’s nest. In charge: star chef Eyal Shani. Head of the Israeli culinary scene, already ahead of Miznon, a triptych of cheerful Levantine canteens in Paris, and unmissable tables in Ibiza, New York, Tel Aviv…, here he is in Cannes. Wide view, blue-white-sand decoration, in the foundry of the dishes of this bio au pic, vegetables, picked early in the morning at the market, have the title role. The fish that just landed from the old port are doing their thing. Octopus chiffon bruschetta, red pepper mezzé roasted in the heart of artichoke sprouts and baba ganoush, prawn pita steamed in sea water, tomato-scented hake meatballs, sharing dishes… life and beauty !

ALYA’S by SW, in Saint-Rémy-de-Provence
Back to basics for Sylvestre Wahid, two-star chef, now running his eponymous restaurant in Courchevel. He takes advantage of the summer, starting this May, to enter the family kitchen in Saint-Rémy-de-Provence, where his brother, confectioner Jonathan Wahid, and his sister-in-law, chef Fanny Rey, run an inn. . On the menu: cuisine, a tribute to its Pakistani origins. Spices and tandoori, vegetables and fish from here, lassi from there, real lentil dhal and okra cooked “mother’s way”… well worth the trip.
